You'd have to go for the secondary brain and those are almost always damaged by the battle. Jaeger pilots aren't nearly careful enough and their weaponry is too crude and the Kaiju too resilient to be killed u without causing a lot of blunt-force trauma or lacerations, rendering samples damaged beyond use!
